The world ‘Halaal’ is Arabic for ‘permissible’, so the literal interpretation of Halaal meat or Halaal fish, is that it’s food considered by Islamic law to be fit for eating. The Islamic ritual slaughter of animals is called Dhabihah (or Zabihah) and what this means in practise is that the person performing the slaughter must be a Muslim of sound mind and fully knowledgeable of the relevant procedures; the animal itself must be Halaal and not have been fed any animal by-products; the animal must be alive at the time of slaughter; the name of God must be called out immediately prior to slaughter; and the knife used must be sharp severing the trachea, oesophagus and main arteries swiftly.

Another qualifying criterion of Halaal certified meat, is that there can be no contamination of Halaal food by non-Halaal food – all Halaal food processing must happen in a completely separate location.
